Five Ways to Help Lunchtime Go Smoothly in Child Care

Children may become restless and irritable when they are hungry—just like adults sometimes do. Many Care Courses students tell us that lunchtime is one of the most difficult parts of the child care day. Cranky children and cranky caregivers do not make for peaceful meals.

That’s why Care Courses offers Transitions and Other Troublesome Times, a training course that helps you conquer lunchtime as well as other challenging periods in your schedule.

Transitions and Other Troublesome Times presents many strategies to make lunchtime an enjoyable experience for you and the children alike. Here are five suggestions from our course to help lunchtime go smoothly:

  1. When planning a schedule, keep the length of time between meals and snacks short enough that children never get too hungry. When children get too hungry, they may become frustrated and exhibit challenging behaviors.
  2. Plan menus that are not too complicated. Meals should not take too much prep time before serving. This allows the children to receive more attention at lunch time. Serving soups, casseroles, sandwiches, or raw fruits and veggies can make lunch time less of a hassle.
  3. Start each child off with a small portion and offer seconds later on. Allow children to serve themselves whenever possible.
  4. Never try to bribe or force a child to eat. Never withhold food or use food as a punishment or reward. Children develop life-long relationships with food early in early childhood, so make sure that the relationship with food is a positive one. Children’s bodies know how much they need. They won’t starve themselves.
  5. Expect spills and messes. Most spills are true accidents and the child who causes the spill will likely be embarrassed and sorry the minute it happens. If a child intentionally pours milk or juice on the table, do not scold them. Use positive guidance techniques instead, saying something like “Let’s wait until after lunch to practice pouring. You may practice pouring later either in the sink or outdoors in a water pan.”

Lunchtime is likely just one of the challenging parts of your day. Transitions of all types can be troublesome—whether it’s the daily transition of moving from free play to circle time, or bigger transitions such as moving to a new classroom. How can I help children and parents at drop-off time when the child is new to my program?

Mornings can be tough, especially for families new to child care or starting a new care arrangement. Saying good-bye can be agonizing for children and their parents. Our course, Parents and Child Care, helps you help families prepare for and overcome the separation anxiety many families experience when starting a new program.

Share the following tips with parents on ways they can help their children prepare for separation and make mornings go more smoothly for everyone:

  1. Find a care arrangement they are comfortable with and project a positive attitude about their choice. Young children are attuned to their parents’ feelings. If parents feel anxious, uneasy, or fearful about leaving their child, the child will feel anxious, uneasy, or fearful about being left by their parents.
  2. Explain the arrangement to the child in a positive way. Point out the advantages the school or care facility has for the child—playmates, interesting activities, age-appropriate toys, and fun equipment.
  3. Listen to their child’s feelings about the arrangement, both before and after the child enters care. Assure the child that these feeling are normal and natural. Never scold or ridicule the child for expressions of separation anxiety.
  4. Answer any questions the child has about the care or school arrangement.
  5. Assure the child that he or she will be in the parent’s thoughts even when they are not together.

Some parents develop special rituals to help their child (and themselves) adjust to being separated. The following is an example from Parents and Child Care:

One mother reported that she talks quietly to her young son each morning before leaving home. She kisses both of his hands and explains that these kisses will stay with him all day until she returns. They cannot be washed off. They are there to remind him that she is thinking of him whatever he is doing and hoping that he is happy and having fun. She tells him that if he misses her, he can just think of these kisses and know that she is thinking of him and will come to pick him up at the end of the day.

Through open communication, parents and caregivers can help children understand the separation and have a more fulfilling and enjoyable day!

How to Make a Running Record

As a caregiver or teacher, it is essential for you to have accurate and up-to-date information about each child's level of development. Observing children's normal activities is your most reliable source of this information. Care Courses offers Observing, Recording, and Assessing Children’s Development, which covers the best ways to perform observations and to assess children’s development.


The focus of this blog will be how to make a running record, which is one of the types of observations detailed in the course.

Running records are open-ended, narrative-type records that cover a sequence of behaviors over a period of time. Running records are a good tool to help you discover causes and consequences, for example, finding a pattern to a challenging behavior such biting or hitting. Running records are also useful for planning learning activities for individual children.

Running records include everything that happens during the period of observation. Behaviors are recorded as they happen. Running records provide a rich, complete, and comprehensive account of the child’s behavior.

When writing a running record:

  • Observe only one child at a time.
  • Record only the facts of what you see. Avoid using words that judge or interpret. Don’t record what you believe, suspect, or infer from the child’s actions.
  • Record every detail. Don’t omit anything.
  • Record behaviors in the order in which they occur.

 

Include the date, time, and location of your observation; the name and age of each child involved in any incidents observed; and the context of any these incidents. As with all observation records, keep your comments separate from the running record itself and clearly label these as your comments.

While no single observation method provides you a complete assessment of a child, combining regular running records with other types of observations will give you a more extensive picture of the child’s needs, interests, and skill levels.

Pumpkin Patch

You Will Need:

  • 2 large carrots
  • Toothpicks
    • Note: Toothpicks should only be used under adult supervision. Remove toothpick before serving to children.
  • Curly-leaf parsley
  • Scallions (optional)
    • Green onions or chives are acceptable as well
  • Hummus (or other thick, kid friendly dip of choice)

What to do:

  1. Cut carrots into coin shapes pieces and spear in the center with a toothpick.
  2. Add a parsley leaf to the top of the carrot (through the toothpick if you use one)
  3. Cut a small piece of scallion and thread it onto the toothpick to use as the optional pumpkin stem. If you do not use the toothpick, just use a tiny dab of hummus to adhere the parsley and scallion.
  4. Spread store-bought hummus on a platter, dish, or tray to create the field, and arrange pumpkins on top.

Witches’ Broomsticks

You Will Need:

  • Reduced-fat mozzarella cheese sticks
  • Pretzel sticks
  • Chives
    • You may also use green onions or scallions

What to do:

  1. To make the broom –
    • Slice the mozzarella stick in half (width-wise)
    • Use a knife or scissors to cut a fringe pattern on the lower half of the cheese.
  2. To make the stick –
    • Insert a pretzel stick into the cheese, then tie a chive around the top.

 

Apple Mummies

You will need:

  • An apple (green for that Halloween color, but red or yellow or a mix is fine)
  • Gauze tape
  • Candy eyes (if you do not wish to serve candy to the children, cut a raisin in half or fourths and it will stick to the apple)

What to do:

  1. Cut a piece of the gauze tape from the roll. Piece should be long enough to wrap around the apple two or three times.
  2. Cut that piece in half lengthwise (to make a narrower strip.)
  3. Wrap gauze tape around the apple (leaving an open space in the front for eyes.)
  4. Once finished, trim any excess gauze tape.
  5. Attach candy eyes using icing or peanut butter (or non-nut butter spread.)
    If using cut up raisins, you will stick the raisin to the apple, it doesn’t need any type of adhesive element.

To serve:

Remove gauze tape and peel apple.

These apples are good as an alternative to handing out little bags of candy for the children to take home after a Halloween or Fall celebration.

So how do you create your CDA Professional Portfolio?

Anyone pursuing their CDA Credential should purchase the Competency Standards Book, which is available through the CDA Council’s website. This book gives step-by-step instructions on how to build your Professional Portfolio.

The five main components to a Professional Portfolio are:

  1. The MY CDA Professional Portfolio cover sheet.  This is a checklist of all the items you need in your Professional Portfolio.
  2. The Summary of MY CDA Education cover sheet, followed by all of your certificates, letters, and transcripts.
  3. The Family Questionnaire cover sheet, followed by your completed Family Questionnaires.         
  4. Six Reflective Statements of Competence, followed by the related Resource Collection items as outlined on the MY CDA Professional Portfolio cover sheet.                            
  5. Your Professional Philosophy Statement. This is a summary of your professional viewpoint, which should reflect new ideas you learned through completing your training and portfolio.

You should have your Professional Portfolio completed by the time you apply for your CDA Credential.

Is there a time limit for the CDA?

If you are using Care Courses to complete the 120 hours of training for your National CDA, you have as long as you need to complete your coursework.  Care Courses does not currently impose an expiration date or time limit on your training. 

Let Care Courses Help You Earn Your National CDA!

The CDA process typically takes six to eight months on average to complete, but every candidate is different.  The CDA Council does not recognize an individual as a Candidate for the Credential until that person has submitted their application and assessment fee so you have as long as you need to prepare the components necessary to be able to submit an application.  If your current employer has a time frame that they’d like you to adhere to, then you need to make sure you have ample time to meet their deadlines. 

The only time limit that the CDA Council has when obtaining the CDA is the one for scheduling your Verification Visit and CDA Exam.  You have a six-month window after receiving the “Ready to Schedule” notice to take your CDA Exam and have your Verification Visit.  

Once you’ve earned your CDA you must renew it every three years.

How do I become a Bronze level child care center director in Oklahoma?

Do you want to become a child care center director in Oklahoma? If you aren’t sure how to begin, Care Courses can help you understand the process and provide you with the training you need to obtain the Bronze level Oklahoma Director’s Credential. Bronze is the entry-level director’s credential in Oklahoma.

Oklahoma Child Care Center Director

To work as an Oklahoma child care director, you must be at least 21 years old and obtain your Bronze or higher level OK Director’s Credential. The requirements for the Bronze level credential include the following four components:

1. General Education — You must have a high school diploma or GED.

2. Experience — You must have at least 12 months of experience working at least 30 hours a week as a teacher, master teacher, family child care home primary caregiver, assistant director, or director in a licensed child care setting.

3. Early Childhood Education (ECE) Child Development (CD) School Age (SA) Knowledge and Skills — You can meet the ECE, CD, and SA Knowledge and Skills requirement by earning one of the following:

  • 6 ECE/CD/SA credit hours from the Center for Early Childhood Professional Development (CECPD) approved coursework list at www.cecpd.org; or
  • the Oklahoma Competency Certificate in ECE from the Oklahoma Department of Career Technology; or
  • a national CDA or CCP professional credential.

4. Administration (admin) Management (mgt) Knowledge and Skills — You can meet the Administration and Management Knowledge and Skills requirement by earning one of the following:

  • an approved admin/mgt credential such as the National Administrator Credential (NAC); or
  • 3 admin/mgt credit hours from the approved coursework list at www.cecpd.org; or
  • 30 admin/mgt hours of training approved through the Oklahoma Professional Development Registry.

Care Courses offers an Oklahoma Child Care Director’s Credential Administration and Management Knowledge Skills training program approved by the Oklahoma Registry to meet this requirement. Our self-instruction bundle is available in a book or an online learning format. This program grants 44 hours of training and covers Staff Management & Human Relations, Program Operations & Facilities Management, and Educational Programming & Family Support.

The application fee for the Director’s Credential is $25. You can apply online or download a paper application on the CECPD website. To maintain the Bronze level director’s credential, you need 20 hours of job related training each year. You may use Care Courses to earn those 20 hours of job related training.

If you are looking to obtain the higher-level Copper, Silver, Gold, or Platinum Director’s Credential, refer to Appendix EE. (Page 113) in the OK DHS Child Care Services Licensing Requirements for Child Care Programs (Effective 11/1/16).
